Delmonico's is the name a famous New York City restaurant operated by the Delmonico family at 2 South William Street in Lower Manhattan during the 19th and early 20th centuries, when it gained a reputation as one of the nation's top fine dining establishments. The birthplace of the widely imitated Delmonico steak, the restaurant is credited with being one of the first American restaurants to allow patrons to order from a menu à la carte, as opposed to table d'hôte. It is also said to be the first to employ a separate wine list.

In this Chapter, Captain Deane is recounting the preparations he made to entertain His Royal Highness Prince Fushimi of Japan at Deane House in the summer of 1907.

“ I had a competent working housekeeper, who was quite equal to the occasion of cooking a good luncheon for the party...

The menu I selected was well within my housekeeper's ample capabilities, and I studied "The Times Cookery Book," which I had recently bought for etceteras. The book had been compiled by a famous ex-chef of Delmonico's, in New York, and would bear quite a lot of study. In it I found a ‘Sauce Tartare,’ which was new to me and which I determined to have.”
